Can I use De-Fusion on an X/Y/Z Fusion Monster and Special Summon the monsters listed on the card from the Graveyard (assuming before that they ended up in the Graveyard in some way)?

No, by Fusion Material it refers to Cards used to Fusion summon a monster, not to the cards listed on the fusion card. XY XZ YZ XYZ are not fusion summoned.

De-Fusion
You may use "De-Fusion" to Special Summon "Goddess with the Third Eye" or "King of the Swamps" if it was used as a Fusion Material Monster for the Fusion Monster selected with "De-Fusion".

You must remove from play the monsters specified; you cannot use Goddess with the Third Eye, etc., because you are not performing a Fusion Summon.
In the JERP, I think, it said that you CAN special summon the monsters used to summon the De-Fusioned monster.

Considering they just had a huge rulings post for "De-Fustion", since the monsters used to special summon the XYZ fusion cards are removed from play, they won't be in the graveyard to be special summoned. And yes, it has to be the exact ones.
