for example:

player a: has 2 face-up attack position monsters on his side of the field, one of them is mystic tomato and the other is just a normal monster.

player b: has also 2 face-up attack position monsters on his side of the field. its player b's battle phase and he attacks player a's normal monster first then he attacks mystic tomato with his other monster. mystic tomato's effect takes place so the number of monsters in player a's side of the field changes. does a replay occur? does player b have the chance to attack with his two monsters again?

Attacking Mystic Tomato does not cause a replay because:

Since the effect of Mystic Tomato activates after the attack, not before.

In addition, replay simply rewinds the gameplay for the attacking monster to the beginning of the Battle Step. It does not reset the Battle Phase.
 
The replay only occurs when the number of monsters on the opponents side of the field changes during the battle step. In that case the replay rewinds the action to the start of that battle step (so monsters who already attacked don't get to attack again, but those who haven't have the choice to attack or not).

Since "Mystic Tomato" resolves only after he hits the graveyard in the damage step, no replay would occur.
