If you have Xing Zhen Hu on the field and your opponent has 2 spell/trap cards on the field affected by the aforementioned. Would activating Giant Trunade allow me to return all the cards back to hand without any activation of the cards affected by Xing Zhen Hu.

Not sure exactly what you mean. If you activate Giant Trunade and Xing Zhen Hu is 'sealing' two set cards then all three cards, the two set and Xing Zhen Hu, are going to be returned to thier owner's respective hands.

Are you asking if you can chain one of the 'sealed' set cards in responce to Giant Trunade? If so, then no.
