is right to play goblin attack force and similar cards in this way?
1) I attack, it turns to def position
2) my opponent turn
3) my turn, at the end phase i turn it to atk position

another question, if my opponent in his turn take control of my goblin atk force when it's in def positon because had attacked in the past turn can he turn it in atk position?
 
Unfortunately, no, that's not the way to play those cards. You can't manually change the position of a monster during your End Phase. And no, it doesn't automatically change to Attack Position at the end of the 2nd turn either.

This is how it works.

P1 attacks with "Goblin Attack Force". At the end of the Battle Phase, it changes to Defense Posititon.
P1 ends turn.
P2 does his turn. (If P2 takes "Goblin Attack Force" now, they CAN'T manually change the position yet because it hasn't been 2 turns yet.)
P2 ends turn.
P1 does his turn. P1 still can't change the position. The timing isn't right until the end of this turn.
P1 ends turn. Now, from this point on, "Goblin Attack Force" can be changed back to attack position, but this can't be manually done during the End Phase, so P1 must wait until their NEXT TURN before they can manually change it.
P2 does his turn. (If P2 takes "Goblin Attack Force" now, then they CAN change it's position.)
P2 ends turn.
P1 does his turn. NOW P1 can manually change "Goblin Attack Force" back to Attack Position.

Basically you have to wait 2 full turns before being able to manually change the battle position of a monster like "Goblin Attack Force".

You could always change the position with a card effect (e.g. labyrinth of nightmare), or use a card effect to flip it face down again before flip summoning it.
Speeds things up a bit.
