If I take control of Sacred Phoenix of Nephthys and I flip it face-down with Book of Moon and I tribute Hiita the Fire Charmer will I remain Sacred Phoenix of Nephthys ?

Thats a very good question. I would say Yes, Phoenix would remain on your side since monsters that are face down usually have effects reset. The effect of Hiita needs to be face up on the field, but since Sacred Phoenix will be face down, it loses the effect.

Phoenix should remain under your control because the effect calls for a specific Attribute. Flipping Phoenix face-down (or any other monster for that matter) should sever the link.
