If I played Convulsion of Nature and had the deck face down. (To where I could see the bottom card.)

Could I play Reversal Quiz. and then guess the top card would I guess the bottom card, or the top card of the deck. The one I can see or the one I cannot see?
 
Yes, that move is perfectly legal.

You guess the card that is on top of the deck.

If Convulsion of Nature is active, it's basically the one you could see at the top of the deck.

Note: that Convulsion of Nature has no effect to determine what is the top or bottom of the deck.
 
Down fall, "Reversal Quiz"

Send all cards in your hand and on your side of the field to the Graveyard. Call the Type of card (Monster, Spell, or Trap) on top of your Deck. If you call it right, exchange your current Life Points with your opponent's current ones.

Being that you are now guessing from the original top of the deck. This is because "Convulsions of Nature" is no Longer on the field. But i guess you could use "Convulsions of Nature"...and "Yadu Karu"...even though i hate him. That way you use "Yadu Karu"'s efect and put a card to the "bottom" which is actualy the top of the deck, play reversal and name the card you just placed there.
 
However, you can not interrupt the resolution of a effect. So even though Reversal Quiz sends Convulsions of Nature to the Graveyard, you must finish resolving Reversal Quiz before you turn your deck back to normal.

Except again, sending everything on the field and your hand is the cost to activate "Reversal Quiz". So everything would be flipped back to normal by the time you go to resolve "Reversal Quiz".
