Stealth Bird is a bird so it's fast, but must wait a turn before it can use its effect, so it's slow. It always comes around because it can be re-flipped, and knows no bounds since it's effect can just keep on activating.

Although I like your thinking, that is incorrect. Stealth Bird can still be stopped. What I'm thinking of cannot. So while figurative, you're not figurative enough...

*is still trying* Strike Ninja? He can run like mad, cannot be killed by targeting effects (dodges them with his effect) and knows no bounds cause he phases between worlds? And slow, cause it takes him till the end of the turn to come back?

I dont know about the other criterion, but the only card that pops into my mind as unstoppable is Spiritualism

quick as playing it from your hand, slow as a spell speed 1 card, only returns things to the hand so it will come around, and Spiritualism is a philosophy without bounds.
