Thats a very good question. I would say Yes, Phoenix would remain on your side since monsters that are face down usually have effects reset. The effect of Hiita needs to be face up on the field, but since Sacred Phoenix will be face down, it loses the effect.
They can be slow, but very useful. Best play I find is with Giant Trunade in the deck and to save them before setting another card, unless your opponent can pick up what you are planning quickly. Although the cards are slow in terms of getting their effect, they are definatly worth trying.
